How fake is it really?

I watched Judge Judy and she obviously let off a really guilty person, and the innocent party cried as the snotty girl that was being sued smiled. I wondered if anyone who has ever been on would say, after the judgement, "Wow, Judge Judy really got snookered, I was so guilty!" and then leave...and if so, would anyone see...I also wondered, if on wife swap...why there has never been an affair...if they just wouldn't show it...because it doesn't fit the premise of the show where they play the sappy music druing the original couples reunions...
